Best Pumpkin Iced Cookies!

We all have those fail safe recipes that we save for when we have company or have to impress some new neighbors, and these…. well, these are mine.

They are nothing short of amazing, and fairly simple to throw together.

Ingredients:

  • 2 1/2 c all purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. ground cloves
  • 1/2 tsp. salt
  • 1/2 c. butter softened
  • 1 1/2 c. white sugar
  • 1 c. canned pumpkin puree
  • 1 egg
  • 1 tsp. vanilla

For the icing

  • 3 Tbsp. milk
  • 1 Tbsp. melted butter
  • 1 tsp. vanilla
  • 2 c. confectioners sugar

First, mix all the dry ingredients in a medium sized bowl.

Second, mix the butter and sugar together until smooth. Then add the pumpkin puree, egg and vanilla.

Next, you’ll slowly add your dry ingredients (flour mix) to your wet ingredients (pumpkin mix). After it’s all mixed, you can start dropping 1+ Tbsp at a time on a lined cookie sheet.

Bake at 350 for 15-20 min (I typically do 16 min), and let cool.

While they are baking, combine all ingredients for the icing (milk, melted butter, vanilla and powdered sugar).

Once the cookies have cooled completely, about 20 min, you can put the icing on. To do this, I typically dunk the cookie in top first and just let it sit for a second, then pull it up, let some of the icing drip off, and flip over and set on the cooling rack.

The icing takes about 45 min to set, but I would give about an hour before I stack them or eat (if I can help it).
